An oshibori can be prepared at home in five minutes: dampen a small cotton cloth, wring it out, roll it up, and heat it. The only place where you can go wrong is with the temperature, and the mistake is always the same: too hot.
What you need
- Small terry towels made of cottonApproximately 30 by 30 centimeters. Washcloths work, linen kitchen towels do not.
- WaterThat's all. Fragrance additives are possible, but optional.
- A heat source: Microwave, steamer or hot water in a pot.
Instructions in four steps
- Moisten. Dip the cloth in warm water and wring it out firmly. It should be damp, not wet. If it drips, the table will get wet instead of your hands.
- Roll. Roll it up tightly from the long side. A rolled-up cloth retains heat significantly longer than a folded one because less surface area is exposed to the air.
- Heat. In the microwave, about thirty to fifty seconds at medium power. In a steamer, a few minutes. Then let it stand briefly to allow the heat to distribute.
- Check. Always test the cloth on the back of your own hand before handing it over.
The right temperature
A comfortable temperature is one that is noticeably warmer than the hand, but doesn't cause a flinch. This range is roughly equivalent to what feels pleasantly hot when washing your hands.
Microwaves heat unevenly, creating hot spots inside the roll. Therefore, after heating, let it rest for half a minute and then test it on the back of your hand. Skipping this step risks burning someone else.
How long they stay warm
A rolled-up cloth on a plate will maintain a comfortable temperature for about five to ten minutes, after which it will cool down noticeably. In a closed bowl or under a cover, it will stay cool for a few minutes longer.
This is sufficient for a meal at home, because the cloths are prepared right before serving. It's not sufficient for every business, and that's precisely where improvised solutions fail in the restaurant industry.
With or without fragrance
A single drop of essential oil in the moistening water is sufficient; more quickly becomes overpowering. Lemon, green tea, and lavender are the most common scents. If you have guests whose sensitivities you don't know, it's best to leave it out.

Cold Oshibori in summer
On hot days, reverse the principle: dampen the cloth, roll it up, and place it in the refrigerator for half an hour. Do not put it in the freezer, as a frozen cloth is unpleasant and cannot be unfolded.
